Following manual harvesting, the bunches of grapes are softly pressed, with the must thus obtained being pumped into stainless steel tanks for alcoholic fermentation lasting 2-3 weeks. Malolactic fermentation, on the other hand, is assisted or disfavoured depending on the vintage to obtain a balanced wine every year.
