'Gian Pero' Ilaria Salvetti

"Gian Pero" is one of the labels made by the winery of Ilaria Salvetti, a young Piedmontese company that cultivates vineyards and produces artisanal wines in the lands of Canavese. Extreme care in the management of the vineyard and simple and essential winemaking give a bottle that perfectly expresses the character of an area highly suited for the cultivation of white grapes. The wine is perfumed and fragrant, and its immediate mineral freshness makes it a delightful drink. It is an ideal label to enjoy as an aperitif or to accompany seafood appetizers.

Ilaria Salvetti's "Gian Pero" wine is the fruit of a small family-owned estate, which cultivates a few hectares of vines under organic farming. At the basis of the production process are excellent quality white grapes from the estate's vineyards located on the gentle relief of a moraine hill, set at an altitude of 350 meters above sea level. The soils were generated by the retreat of a very ancient alpine glacier, which left debris composed of pebbles, sands and gravels, making the soils very draining and suitable for viticulture. The low yields per hectare allow healthy and perfectly ripe grapes to ripen. Grapes are harvested by hand during the first weeks of September. The clusters are destemmed, and after soft pressing, the grapes remain in contact with the must for 24 hours. The fermentation takes place spontaneously, using only indigenous yeasts, in temperature-controlled stainless steel vats.

Ilaria Salvetti's "Gian Pero" white is a simple and immediate wine made to enhance the grapes' varietal character. To the eye, it has a luminous straw-yellow colour with light greenish reflections. The olfactory profile is particularly delicate and subtle, of great finesse and expresses floral scents of orange blossom, hawthorn, aromas of fragrant white-fleshed fruit, green apple, pear, and nuances of wild herbs. Harmonious and well-balanced, it comes to the palate with a smooth sip, marked by a pleasantly ripe and expressive fruit, which flows into a finish of good flavour persistence and lively freshness.
