The Passito di Pantelleria wine "Khamma" is a product with a sweet soul whose name comes from that area of the island of Pantelleria where there is the greatest concentration of vineyards and where Salvatore Murana's family has lived for several generations. A true oasis of green is reflected in the blue Mediterranean Sea, where the Zibibbo grape gives persuasive fruity notes to the nose, where tertiary hints and iodized effluvia also appear. A strongly identifiable bottle, a beautiful expression of the sun, warmth and sea of Sicily.
"Khamma" Passito di Pantelleria comes from using zibibbo grapes. This variety is cultivated by Salvatore Murana using the alberello system in those plots located in Contrada Khamma, an area on the coast of the beautiful island of Pantelleria that gives the label its name. The clusters during the harvest are selected by hand and then harvested under the sun in the special "stinnitura," that is, trellises, for 20 to 30 days. After destemming, the berries are pressed, and the must ferments in stainless steel at a temperature of 25 to 28 degrees. Ageing, which lasts 12 months, takes place in second- and third-passage Allier barriques.
Passito di Pantelleria "Khamma" from Salvatore Murana winery takes on a beautiful golden yellow colour at sight. The nose is dominated by fruit, declined with notes of jam and exotic hints, enriched by hints reminiscent of spices, released by the wood to the wine during ageing. On the palate, it is full-bodied, mellow, and almost tactile, with a sip that envelops the palate with a pleasant sensation of warmth, which encourages repeat drinking. When considering ending a dinner party on a high note, wines like this are the key to making unforgettable dessert pairings.
